For years, many of us have heard that carbs are “bad” and animal protein is “good.” It’s a simple narrative… but nutrition science paints a far more interesting picture. Thanks to decades of work by Dr. T. Colin Campbell and ongoing clinical research by Dr. Thomas Campbell at the University of Rochester, we now understand that the story of carbs and protein is much more nuanced.
